Orange Cupcakes with Orange Butter Cream Icing


When a man travel from one place to another he gets more experience of life and discovers many things in the process of living. However, when a food travel it gets more popular this is what happen to my cupcakes is hit and people asking for recipes. You will get to know once you had it, all I want to say due to adding zest of orange it test phenomenal and you must try it and let me know your experience.







 Ingredients:
Plain flour (maida)250 gm
Sugar 225 gm
Orange Juice2 tbsp 
Baking pwd1 tsp
Baking soda1/2 tsp
Egg 2
Vanilla essence1 tsp
Salted Butter      150 gm
Zest of Orange1
Milk 1/2 cup

For Icing :
Sugar1 cup
Butter115 gm
Orange Juice2 tbsp
Zest of Orange1
Orange Red colour1/2 tsp



Method:
  1. Sift flour, baking powder and baking soda together in a bowl. 
  2. In the separate bowl beat the butter and sugar until light and fluffy.
  3. Add egg one by one and beat until the mixture is smooth.
  4. Add zest of orange and fold it gently.
  5. Put freshly squeeze Orange Juice and fold it briskly. add vanilla essence in to it.
  6. Add the flour and milk in 3 additions, starting and ending with flour. Mix until evenly combined.
  7. Preheat oven for 10 minutes at 180 c.
  8. Pour into the prepared cupcake liners and bake in the oven  for 18-20 minutes or until a skewer inserted comes out clean.
  9. Remove from oven and let it cool completely.
  10. In a separate bowl beat the butter and half amount of sugar until it becomes light and fluffy.
  11. Add remaining sugar and beat well.
  12. Put zest of orange , freshly squeeze orange juice and beat well.
  13. Add few drops of colour and fold it briskly.
  14. Fill the Piping bag with the icing and decorate the cake.

  • Get Whole orange and grate it evenly to get zest for your recipe avoid white part it taste bitter. 
  • Squeeze same orange to make fresh orange juice. 
  • Grind sugar and use it in powder form.
  • If you are using unsalted butter, add 1/4 tsp salt in to the batter.

Red Velvet CupCakes & Award


My Old Oven ditched me... Phew!!!
When I decided to bake and due to blogosphere, I don't have to look for recipes anywhere. My Oven started giving me burned bakes and because its very old I'm not getting servicing anywhere.
You know even company does not exist anymore...That's sound funny naa.
Never mind..gotta new Convection Microwave oven and I tried most awaited recipe.
Red Velvet Cupcakes are so light and yummy...you can't have just one..:)





 Ingredients:

Plain flour (maida)150 gm
Sugar 150 gm
Cocoa pwd1 tbsp 
Baking pwd1 tsp
Baking soda1/2 tsp
Egg 1
Vanilla extract1/2 tsp
Rose pink colour1 tbsp
Amul Butter      90 gm
White Vinegar 1/2 tsp
Milk 1/2 cup


Method:
    1. Sift flour, baking powder, baking soda and cocoa together in a bowl. 
    2. In a cup, stir the red colouring into the milk. Set aside.
    3. In the bowl beat the butter and sugar until light and fluffy.
    4.  Beat in egg, followed by vanilla extract until the mixture is smooth
    5. Alternately, add the flour and milk in 3 additions, starting and ending with flour. Mix until evenly combined.
    6. Quickly add vinegar to the batter and fold through briskly until evenly incorporated.
    7. Preheat oven for 10 minutes at 180 c.
    8. Pour into the prepared cupcake liners and bake in the oven on the middle rack for 20mins or until a skewer inserted comes out clean.
    9. Remove from oven and let it cool a wire rack.

        Paan Shake


        I never heard of Paan Shake until I come across Tupper Ware (Kitchen storage products) showing recipe. Which I can prepare using their products. (Which I didn't)...Paan (betel) is good for digestion and good to be served after dinner. Gulkand is sweet made from Rose petals and are easily available in all store because it's one of the ingredient widely consume in Sweet Paan .Try the Paan Shake and you will fall for it. :-)






        Ingredients:
        Betel Leaves (paan)4
        Gulkand 3 tsp
        Milk250 ml
        Fresh Cream2 tbsp
        Sugar1tbsp



        Method: 
        1. Roughly chopped betel leaves.
        2. Grind betel leaves, gulkand, cream, half amount of milk and sugar to make a fine paste.
        3. Add remaining milk and paste together, shake it well.
        4. Refrigerate it for 2-3 hours.
        5. Pour it in to glasses and served chilled Paan Shake.

        Layered Custard and Jelly Dessert

        This is not just a dessert, I have quiet good memory with the layered custard jelly. During my hostel days when my best roommate  changed her Tiffin service (after having lots of disgust foods.). Kokni aunty gave her special dessert for taking her tiffin and we loved sharing. ;) It was my first and last dessert. She never repeated the same dessert... (really waited for her yummy dessert).
        I tried it myself and on my second attempt, I got a delicious & eye capturing dessert.
        My family enjoyed the dessert. I'm posting it on Valentines Day so, you have enough time to make your family happy.

        Tamarind sauce/ Imli chutney







        Ingredients:

        Tamarind100 gm
        Cumin seed1 tsp
        Green Chili2
        Garlic3 cloves
        Salt1/2 tsp
        Date4-5
        Jaggery150 gm
        Sugar (optional)200 gm


        Method: 

        1. Clean and wash tamarind.soak in a water to the surface for 2-3 hours.
        2. Chop  unseeded dates. It gives the consistency to the sauce.
        3. Grind all above ingredients and boil it for few seconds.
        4. whatever you have handy use either jaggery or sugar.
