Almond & Honey Cookies/Diabetic Friendly

These cookies have no sugar yet taste good. Yes,you are reading it correctly.These cookies are diabetic friendly and kids like it,which I discover when my nephew tasted it and asked for more cookies.Hence,Mom’s out there this is good news for all of you,Cookies contains Almond & Honey,health wise it is good.
I have made these cookies for my parents.Diabetic patient has to be careful on their sugar intake and my parents are suffering type 2 diabetic from last 8-10 years.My parent do cheating when they have high sugar level they make me to cancel their doctor’s appointment I have to reschedule it later dates.They really do everything to make it better.Be it walking,avoiding foods that could increase their sugar level. 
Alhamdulillah,Now,they know what to eat & avoid,check their sugar at home using device.They know the highest reading and low blood sugar.Low point is also dangerous for these patients.It could cause a great risk to any body organ.
These days they are more caution towards their diabetic seeing this I have decided to bake something for them.My heart has filled with gratitude when I got green signal from them.I do not like sharing the recipes that has botched at my home.:-)

Look at these helping hands, my nephew is always around me when I am arranging props and I love his presence, he got my gloves. ;-)

 






Adapted:Eating well
Preparation Time: 15-20 minutes
Refrigeration Time: 40-60 minutes
Baking Time : 17-20 minutes
Baking Temp: 180c 
Yields: 28-30 pieces

Ingredients:
Plain flour300 gm
Whole Wheat flour80 gm
Honey3/4 cup
Almonds1cup
Egg1
Baking Pwd1-1/2 tsp
Vanilla essence1tsp
Butter(Amul)3 tbsp
Oil(refinedSunflower)1/3 cup


Method:
  1. How to use Almonds: Toast whole almonds in a pre-heated oven at 180 c for 12-15 minutes.Keep stirring in between. coarsely grind the roasted almonds and keep it aside.(you will get approx. 100 or 120 gm powder)
  2. Take a large bowl sifts the plain flour,whole wheat flour and baking soda and mix it properly.
  3. Beat the butter at the speed of 1of electric beater for 1 minute.
  4. Add honey and beat the both at high speed for 1-2 minutes.
  5. Pour oil in to it and again beat it well until the mixture is blend nicely.(minimum 2-3minutes.)
  6. Add the essence and mix it properly.
  7. Now mix the flour in to honey mixture and combine it well.
  8. Divide the mixture and store it in a cling film.
  9. Refrigerate the mixture nearly one hour.
  10. Prepare the baking sheets with parchment paper.Preheat oven at 180 c.
  11. Take out the one packet of dough. Roll it on a uniform surface, use a round cookie cutter to make these cookies or take out the walnut size dough make a cookie ball moving in between your palm and press it slightly.
  12. likewise,prepare all the cookies.
  13. Bake them in a preheated oven for 17-20 minutes, until you find the slight golden edges.
  14. Start with small batch hence you can find out what temperature suits to your cookies.
  15. Finally,you are ready to have your guilt free cookies.

  • Start with small batch to find out the best temperature suits to your cookies.There is small variation to each oven.
  • My Honey is much darker in colour,so I got the dark colour cookies.
  • They remain crisp 2-3 days if stored in to airtight container.
  • Do not break the egg directly in to the mixture, always play safely with your baking stuff.
