Almond & Honey Cookies/Diabetic Friendly

These cookies have no sugar yet taste good. Yes,you are reading it correctly.These cookies are diabetic friendly and kids like it,which I discover when my nephew tasted it and asked for more cookies.Hence,Mom’s out there this is good news for all of you,Cookies contains Almond & Honey,health wise it is good.
I have made these cookies for my parents.Diabetic patient has to be careful on their sugar intake and my parents are suffering type 2 diabetic from last 8-10 years.My parent do cheating when they have high sugar level they make me to cancel their doctor’s appointment I have to reschedule it later dates.They really do everything to make it better.Be it walking,avoiding foods that could increase their sugar level. 
Alhamdulillah,Now,they know what to eat & avoid,check their sugar at home using device.They know the highest reading and low blood sugar.Low point is also dangerous for these patients.It could cause a great risk to any body organ.
These days they are more caution towards their diabetic seeing this I have decided to bake something for them.My heart has filled with gratitude when I got green signal from them.I do not like sharing the recipes that has botched at my home.:-)

Radish Pickle/Mooli Pickle/Shredded Radish Pickle

This is the rare kind of pickle and one of my favorites too.There are few recipes called for shredded radish but all involves quick pickle or there is storage problem.You must have to refrigerate but you do not have to do this here.This is authentic recipe and you can utilize the pickle almost six month without worrying.

The whole process involves 3 days starts from grating the white radish roots;dry it after you mix it with Turmeric & Salt and finally drying after adding other ingredients.Store it in airtight bottles and use dry serving spoon. If you are making a large batch of Radish Pickle, divide it,keep the pickles in to separate small bottle that you can keep on your dining table and you do not have to take stress of spoiling other half portion.(Yes,I saved some!;))

First time I've prepared pickle and that too Radish.All have done under Ammi’s guidance.
Ok,I will not write in detail as this ignorant roots has many plus points that need to be written a separate post.Let’s find out few benefits of Radish intake.
a.Eating raw edible roots keep,you hydrate and they are good source of antioxidants,minerals,vitamins and dietary fiber.
b.They act as good disinfectors to fight fever.Use radish juice to relieve inflammation.
c.It helps for Digestion,Blood pressure and Skin disease in various ways.

Khatayi/Dried Mango Powder/Amchur

I guess we Indians relish tangy flavors in our food. Some may use Tamarind,Lime Juices,Lime flowers,Amchur Powder(that comes from drying raw mangoes)and so in Uttar Pradesh state, India khatayi(Dried Mango Powder) is utilize in various food preparations.
Khatayi and Amchur powder both is prepared from drying mangoes but khatayi has further steps that I am sharing here.

I’ve prepared Pan-FriedFish,Fish Curry-North Indian Style using khatayi.It has very distinct flavor and it gives colour to your dish.If you’re unsure, check the above recipes.

Those mangoes are use to dry are collected when the raw mangoes are in their initial stage,very small,green,sour and unripe.Once harvested they are peeled, remove if they have seeds, dried under sunlight.Later,dried mangoes are pound in to mortar & pestle to get amchur powder.Lastly,mix Garlic pods,dry red chilies Salt & Oil in to the powdered mangoes.  Again,keep them under sunlight for 12 hours to get extreme dry Khatyi.Khatyi prepared from this method are store for a year.

The above mention method is purely old style and there is no new invention yet.The second or you say last option is buying market bought Amchur powder.

My grandmother used to send us Khatayi so never needed to prepare at home.Now,(May Allah shower his blessings & forgive her)she has expired and this is the last batch of khatayi that she has made.Pictures are close to my heart and it will be treasure here.

My Ammi makes curd and I do not remember since when she started making it at home. May be I was 10 year old.Oh!I really do not know and maybe I have seen it always in the refrigerator so did not have a thought of posting it.By the way,when you will start making it at home?

Oven-Roasted Chickpeas

During my blogs read,I come across this recipe here.I found it healthy snacks so without wasting my time I baked it.I got the baking ‘IDEA’ at her place but changed the ingredients as per my taste.
My Abbu (Father) likes snacks and so I did not take lots of time to think and baked it. Though he liked it,I cannot bake it any sooner(Sad naa).The reason is it takes around 40-50 minutes to bake and finishes in no time. ;)

Pistachio & Almond Chocolate Fudge

I have prepared these fudges just to save my raw chocolates.Yes!After a long time I was browsing my baking stuff and noticed milk compound chocolate is going to expire soon.
So I search and research in Google.Google knows all my problems and has so many answers that are helpful most of the times and sometimes putting me in great dilemma!

I picked up 3-4 random recipes and come to conclusive recipe that you can see here.They are not visually appealing but also equally satisfying to your taste bud.These are easy to make and melt in mouth candies and which is good to satisfy your chocolate cravings at midnight.

Mutton Dalcha/Dalcha Rice-Pune Style Dalcha

After finishing my graduation when I went to Pune city for further studies,get chance to relish Dalcha dish. Before that,I only heard about it from my elder family members.I & my other family members are educated from Pune or atleast they have some connection or link to this place.So I feel more like my second home.;)
In Pune almost all eatable place serves you Dalcha and my tiffin aunty who provide tiffin’s to every hostel too makes good Dalcha.

You see??? It's not that tough and yeah bit time consuming.(Sigh)

Dalcha is made of leafy veggies,Bottle gourd and Mutton meats are used.This dish is to serve with rice.

I would say Ambat Chkka(Khatti Palak)is one of the main ingredients and the situation was vexing us after trying hard we didn’t get it in our local vegetable market.Some of vendors do not know what it is and even we have not seen it so it may have happen we have crossed the particular shop and did not recognize it. Nevertheless,we did try in other markets and after trying hard Really hard!We get khatta Palak and now it is easily available here. Putting the leafy vegetable pictures was most important agenda for me, as I do not wanted you to suffer. :-)
When you go to Pune city eat Dalcha or if you have less chance to reach there any sooner you can refer my recipe to enjoy Dalcha with whole family in a loving environment.
